How many different plants do you eat each year? Humans evolved eating a far more botanically diverse diet than that which is predominant among modern humans in the United States. As the cold and gray melts away and the green world returns, let us begin to shrug off the long nights of this legacy; let us return to the senses re-emerging and explore the various plants and transitions which come with the spring. In this workshop we will familiarize ourselves with a number of plants local to our bio-region that are particularly relevant in the Spring; we will discuss and taste culinary and medicinal preparations of some of these plants; and we will consider the importance of this evolutionary relationship between humans and plants.
